Uncle Tommys Nice n' Easy Turkey Meatloaf "Surprise"

Believe me; this moist and delicious recipe will wake up the taste buds of everyoneย

I honestly can’t remember where I first found this recipe, but it never fails to satisfy. 

So, if you wanna try something easy and tasty on your family tomorrow, give it a whirl.

(Technically, it even counts as a good natured โ€œprankโ€ as I bet they wonโ€™t be able to tell it ain’t beefโ€ฆ)

This recipe makes 6 servings

Ingredients
8 ounces
Mushrooms (Trimmed and Finely Chopped)
1
Medium Onion (Peeled and Finely Chopped)
2
Garlic Cloves (Minced)
1 TBSP
Oil
3/4 tsp
Fine Sea Salt
1/2 tsp
Black Pepper
1 TBSP
Worcestershire Sauce (If I had a secret ingredient, THIS would be it!)
7 TBSP
Ketchup (Divided)
1 Cup
Breadcrumbs (I prefer Panko, but use what you got)
1/3 Cup
Milk
2
Large Eggs (Beaten)
1 1/4 Pound
Ground Turkey (Extra Lean, 92%)

Directions

  1. Heat the oven to 400 degrees Fahrenheit and line a baking sheet with aluminum foil.

  2. Lightly oil the baking sheet (Shelby says it’s a good ideaโ€ฆ)ย 

  3. Grab a large onion. โ€˜Cause I donโ€™t want large bits of onion in the meatloaf, I like chopping it into pretty small pieces. Heat a large pan and add a little oil and cook the onions until softened.

  4. While the onions sautรฉ, finely mince some garlic. (Or grab 2 teaspoons of the stuff in the jarโ€ฆ)

  5. Now, move on to the mushrooms. Shelby recommends cleaning them with a damp paper towel (Btw, the mushrooms are really the *star* here. โ€˜Cause theyโ€™re the secret to delicious, moist turkey meatloaf). Anyways, chop โ€˜em into really tiny pieces either by hand or in a food processor.ย 

  6. Once your onions are softened, add the garlic and cook for a minute.ย 

  7. Now, throw in the chopped mushrooms along with some salt and some pepper. Now cook, stirring occasionally, until all the liquid from the mushrooms evaporate and theyโ€™re tender (I know this sounds strange, but I get a kick watching mushrooms shrink down in sizeโ€ฆ)

  8. Next: Transfer the onions and mushrooms to a bowl and add some Worcestershire sauce and some ketchup.

  9. Alright, weโ€™re almost there. So now, watch one of my movies with Cheech for exactly 7 ยฝ minutes. (Gotcha!) All kidding aside…ย 

  10. Grab 1 cup or so of breadcrumbs. Cover them with some milk, and let it sit for aboutย 5-minutes. In the meantime…ย 

  11. Crack a couple eggs into a bowl and whisk until blended.

  12. Now, add the milk, breadcrumbs and beaten eggs to your onions and mushrooms. Then mixย really well.ย 

  13. Add the ground turkey, some salt, a little pepper and mix everything until combined (Btw, I like using Shelbyโ€™s hands for thisโ€ฆ)ย 

  14. Form the mixture into an oval loaf in the middle of the prepared baking sheet from earlier.ย 

  15. Add some extra ketchup on top. Then use the back of a spoon to spread it evenly on top of the meatloaf.ย 

  16. Now, bake the meatloaf until itโ€™s cooked through (Bake it at 400 degrees for about 50 minutes. Itโ€™s done when an internal thermometer inserted into the thickest part of the meatloaf reads 170 degrees Fahrenheitโ€ฆ)

  17. Remove from the oven. Then add just a touch more ketchup on top.

Let your meatloaf stand for about 5 minutes.ย 

And then slice.ย
